Research and Development (R&D) Dietitian
Research and development (R&D) dietitians apply their knowledge of nutrition science to guide the development and improvement of healthier food products. They collaborate with scientists, product developers and manufacturing teams to create recipes, choose ingredients and ensure the final product stays nutritious and consistent. They also guide labeling, health claims and regulatory compliance to ensure products meet industry and government standards.
What Responsibilities Will I Have?
Collaborate with food scientists and developers to create and test healthier foods products
Plan product projects from idea to launch
Analyze ingredients and recipes to improve nutrition and flavor
Conduct taste tests, shelf-life checks and nutrient testing
Ensure labels, ingredients and claims for products meet regulations
Research current dietary trends, consumer needs and new nutrition science to guide product design
Help reformulate recipes to cut fat, sugar or sodium and other ingredients
Prepare accurate nutrition labels that meet regulations
Update and maintain product ingredient databases
Communicate nutrition information to marketing, quality and R&D teams
Summarize research and development findings in reports and presentations
Attend meetings with other staff to ensure nutrition goals align with company objectives
Stay up to date on nutrition science and food regulations
Recommended High School Courses
The following high school courses are recommended: agricultural education, health and physical education, biology, chemistry, English, communications, mathematics and foods and nutrition.
Education/Training Required
A bachelor’s degree in dietetics, food science, nutrition or a related field is required. In the United States, dietitians must receive a certification from the Academy of Nutrition and Dietetics to practice as a registered dietitian. Additional requirements will vary by state.
